Sweet Pepper Delight!

Just about to go into the oven!

These baked peppers are right at the top of my favourites (right along with the good morning ham cups - see previous blog post). These are so easy to make and they also fit perfectly into my post workout meal plan!

Ingredients:

  • Three large peppers any colour

  • 1/2 cup of onion or green onion/shallots

  • 1/2 lb. Of ground turkey (Saute with spice of your choice) Garlic, S&P, Italian seasoning.

  • 3tbsp olive oil

  • 6 large eggs

  • 2 cups of sweet potato

  • 1/2 cup of cheddar cheese (optional)

1. First, preheat overn to 375 deg, spray a casserole dish with nonsick cooking spray. 2. Prep peppers by slicing in half (lengthwise) removing seeds and insides. Rinse/dry. Set in casserole dish. 3. Saute ground turkey (it will continue to cook in oven after this) so cook until about 1/2 cooked. Mix with garlic and spices of your choice. Set aside in Bowl. 4. Wipe grease from pan and heat 3 tbsp olive oil to med/high heat. Add in 1/2 cup shallot, sweet potato. Season with minced garlic, Italian seasoning S&P. Saute 7 minutes (they will also continue to cook in oven). Remove and add to bowl with grond turkey. 5. Mix bowl of sweet potato & meat. 6. Use a spoon to transfer mix into perrper, fillint them about 3/4 of the way. DO NOT OVER FILL. You will need to crack the egg on top still! 7. Crack egg on top being careful not to let yolk break - and careful that it doesn't slide off the side! 8. Bake in oven at 375 for 35 minutes (ish) depending on how you want your yolk! ❤️ I would love to hear your feedback! I hope you love these as much as I do!
